the smallest that we do lips is a 16g. you really don't want anything smaller than that. smaller sizes can give you a "pinchy" "wirey" feeling and aren't as comfortable as something a little bigger with more surface area.
the problem with switching between a ring and a stud is that the piercings are done slightly different. a stud is done more "straight"/perpendicular to your skin. a ring is done with the inside point a little higher than the outside so the ring follows the natural shape of your lip (typically).
i don't think one heals "better" than the other - i'd say get the one you really want rather getting one with the intention of switching it later.
you'll want to avoid getting any cleansers into your piercing. with that being said, typically rinsing and having cleansers run over your piercing isn't a problem - just don't rub/scrub any into the piercing.
healing varies person to person. you'll have some initial swelling anywhere from a few days to a couple weeks... it's typically 6-12 weeks to heal.
you'll be cleaning it at least twice a day for the 1st 4-6 weeks. foods generally aren't an issue. beverages to avoid or cut back on are anything that causes dehydration (caffiene, alcohol).
